Many cookbooks seem to feel the need to apologize for including a recipe for chocolate mousse. I don’t see why, myself. It is true that it is not exactly an original offering, but it is one everyone should know - not only good to eat, but ideally simple to make.

Ingredients

  • 175 g (6 oz) plain chocolate
  • a small lump of butter

Method

Melt the chocolate till soft, with a spoonful of water, in a bowl in a warm oven. Stir it, add the butter and, when amalgamated, the egg yolks and vanilla or rum. Beat the egg whites stiff, but not too dry, and fold into the chocolate mixture. Mix lightly till the mousse is uniformly brown. Pour into a shallow bowl or - if possible - into separate cups. Leave to stand overnight.
