A sumptuous pudding, this, and like so many of the best inventions, simplicity itself - a mound of sieved, sweetened chestnut with a cap of whipped cream. The only problem is peeling your chestnuts. Easier to do while they are piping hot and you are wearing rubber gloves.
Score the chestnuts crosswise across the top and drop them into boiling water. Boil for about 8 minutes, then take out a few chestnuts at a time and remove the outer shell and inner brown skin.
When you have peeled the chestnuts, put them in a saucepan with a little milk sweetened with vanilla sugar (or sugar and vanilla flavouring), and stew for 20-30 minutes or until they are soft. Dr
