Bread sauce and Cumberland sauce are Britain’s most distinguished creations in the sauce line. Even the French, who like to damn our cooking with the faintest of praise, are impressed by these two. Bread sauce, as you doubtless know, is eaten with roast chicken. Even if you don’t have Toast chicken very often, the sauce is worth knowing about because it is easily made and always popular.
