Some startlingly simple ideas can make good eating. This primitive but tasty relish was dished up at a café in Lincoln with ham and eggs.

Ingredients

  • 3 large onions, sliced quite thinly
  • 1 tablespoon salt
  • wine or cider vinegar and chopped parsley

Method

Salting the onions and leaving them overnight, or for a few hours, sweats the ‘fire’ out of them and makes them limp but juicy. Shake the onions with the salt. Rinse quickly in cold water to remove excess salt, and dry on absorbent paper.

Serve with a sprinkling of vinegar and very finely chopped parsley.
