A traditional English country jam, made with mixed orchard fruit - apples, plums, pears - which are ripe at the same time. The Irish version, ‘Mixty Maxty’, is much the same except that it omits the spices.

Method

Quarter the apples, slicing off the core and any brown parts. Do not peel. Chop the pears somewhat smaller, also removing soft or brown parts. Put them all, with the whole plums, into a large pan, with the water and cook gently and slowly until the flesh is all soft. Turn into a large nylon sieve, and rub through into a preserving pan.
