Gooseberry jam is one of the easiest to make, as the fruit has a high pectin content and sets readily. If you like a slightly tart jam, it is also one of the nicest. Unripe gooseberries are best for jam as their skins are less tough.
Put the gooseberries in a large saucepan with the water and bring slowly to the boil. Mash the berries with a spoon and cook for 20 minutes. Add the sugar and allow it to dissolve, then bring the jam to the boil and boil for 10 minutes.
