Put the horseradish, vinegar, and salt in a blender, then add enough water to just cover the horseradish. Blend until smooth, then taste and add more salt if needed. (The horseradish flavor should be very strong.) Stored in an airtight container, the prepared horseradish will last in the fridge for several months.
