When we were doing the recipe testing for the book, I couldn’t stop eating these oysters—I finally had to push them on my neighbor for fear that I would devour them all myself. In my opinion, ingredients that make you work for them, like these oysters, which must be shucked, had better be worth what you end up with, and this preparation passed that test with flying colors. Traditionally, nduja, a very spicy, peppery, spreadable sausage, isn’t cooked at all, but I love the way that it melts
