My wife, Mel, adores stuffed lobster, so this recipe is dedicated to her. My associations with stuffed lobster hark back to the Sea Loft, my first restaurant job, where we made it with Ritz crackers and tons and tons of clarified butter. That’s a bit rich for my taste these days (and for most people’s), so in this version, I’ve replaced some of the butter with shrimp, crab meat, and stock, which add depth, and added panko breadcrumbs to the Ritz crackers.
