When I lived in Germany, one of my favorite things to eat was their potato salad, usually accompanied by some kind of pork product. These days, I am the only pork eater in my house, so I don’t get to eat that meal very often, but I still like to make a riff on that salad that pairs the potatoes with crunchy Persian cucumbers. German potato salad is dressed with a mustard vinaigrette, rather than mayonnaise, which gives it a punchy acidity that I think pairs much better with soft, creamy pot
