There’s a manti place around the corner from where we stay in Bodrum, so whenever we go there, that’s our first stop when we get into town. Watching the women prepare them in the back of the shop is intense: The surfaces are covered with tiny squares of dough, and the cooks stand over them methodically placing little dollops of meat on each one, folding each batch into tiny pinwheels, and starting again.
