Using a stand mixer fitted with a paddle attachment, add the sugar, the flour, and the butter to the bowl and mix on low speed until the ingredients come together in a way that resembles a crumble topping, with the dry ingredients coating chunks of butter. Add the egg and water and continue to mix on low speed until just combined. (Do not overmix.) Wrap the dough with plastic wrap and refrigera
