This is a recipe I’ve used for years, in the restaurants and at home, as an accompaniment with cheeses. It’s now also made its way onto the table when we do a Turkish breakfast at home—this compote with a little feta and Gözleme is a grand slam.

Ingredients

  • 2 tablespoons sugar
  • 1 cup (105 g) fresh cherries, pitted

Method

Put the sugar in a shallow saucepan set over medium heat and allow it to melt and caramelize, 7 to 9 minutes. Add the cherries, blueberries, blackberries, and raspberries and stir to coat the fruit with the sugar.
