Method

  1. Wash and peel the quinces. Core, grate and place in a large nonstick pot. Cover (do not add water) and cook over low heat for 1 hour, stirring occasionally with a silicone spatula or wooden spoon.
  2. Prepare two 8-inch square plastic containers with cover by lightly oiling all over.
