  • 1 frisée lettuce, stem removed and chopped into 4-inch pieces
  • 5 firm peaches, washed and sliced (⅛s)
  • 2 scallions, washed and

Method

  1. Thoroughly wash the lettuce. Pat dry and keep cool.
  2. In a glass mixing bowl, place the sliced peaches, scallions and mint, and sprinkle with verjuice to prevent from discoloring. Set aside.
  3. Just before serving, add the vinegar, olive oil, walnut oil, salt and pepper to the peaches. Add the lettuce and toss gently. Adjust seasoning to taste.
