  • 2 pounds chicken legs, boned, skinned and cut into 4-inch pieces

Method

  1. Pick over the rice and wash the rice 5 times in warm water; drain and set aside.
  2. Place the chicken and chopped onion in a medium-sized saucepan. Add salt, pepper, 1 tablespoon saffron and rosewater mixture, and fresh lime juice. Do not add water. Cover and simmer for 30 minutes over low heat.
  3. Peel and cut eggplants lengthwise in
