This is a finely chopped relish hailing from the American South. Ingredients vary, depending on the family recipe (or if it’s a northern variation), but chowchow almost always contains red bell peppers, onions, and cabbage. And if it’s Southern style, it probably also has green tomatoes. Chowchow can be viciously sweet, but I’ve lightened up on the sugar here to let the sour brine sing.
