Curtido

At the intersection of coleslaw and sauerkraut you will find curtido, the quintessential pickle of El Salvador. And it is difficult to eat pupusas without it. The name translates to “cut,” a very simple way to describe this dish of lightly fermented cut cabbage. If you have a mandoline or a shredder extension on your food processor, this is the time to use it. If not, put that knife to work!
