Fun fact: All pickled or canned peaches must be peeled, as the skins get tough and discolored. The fruit, however, is refreshing, tangy, sweet, and savory—the perfect multipurpose pickle.

Method

Prepare 4 to 5 small peaches. Wash them, cut them into quarters, and remove the pits. Place them in a medium saucepan.
