Spicy Blackened Szechuan Pickled Peppers

These puckery peppers pack heat, tang, and pungency. Some of the flavors here are truly unique, including the unexpected herbaceous, floral kick of Szechuan peppercorns—they taste like nothing else. And a bit of liquor in the brine really gives these pickles an edge. Note that in a Chinese grocery story you will find both Shaoxing wine and Shaoxing cooking wine. Be sure to use the former as it’s of higher quality and has a much cleaner flavor.
