Spanish chorizo is a cured meat, similar to salami, and made with plenty of spices, including lots of smoked paprika. This pizza celebrates the best of Spain with a layer of romesco sauce, a sprinkling of Spanish Manchego cheese, and drizzles of oregano oil.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • Kosher salt and freshly ground

Method

Position an oven rack in the middle of the oven and place a pizza stone on the rack. Preheat the oven to 550°F/290°C (or as high as it will go). Once the oven has reached 550°F/290°C, let the stone continue to heat for 15–30 minutes longer, without opening the door.
