Ingredients: 1 tablespoon brown sugar; 1 tablespoon water; 1 granny smith apple, peeled, cored, cut into 1 inch dice; 1 teaspoon lemon juice; 2 tablespoons superfine sugar; ¼ teaspoon ground cinnamon; 5½ oz rhubarb, trimmed, washed and cut into 3-inch lengths; 2 × 4-oz pizza doughs; Vanilla ice cream, to serve; ¾ teaspoon confectioners' sugar, sifted, + extra for dusting; Semolina or all-purpose flour, for rolling; 1 tablespoon rolled oats; ¾ oz butter, chilled and diced; ⅓ cup mascarpone cheese; 2 tablespoons all-purpose flour; ⅛ teaspoon baking powder

There is nothing more pleasing than being invited to someone’s house for dinner and, at the end of the meal, they offer you a slice of warm homemade apple pie. This recipe cranks it up a notch by adding stewed rhubarb but, more importantly, I have turned it into a pizza, so you can make little individual ones for everyone or make a large one where everyone gets a slice.
