- 1 medium-sized head of cabbage
- 2 tablespoons salt
- Preferred spices (I like caraway seeds), to taste
- Set 1 leaf of cabbage aside. Shred the rest and place in a large bowl.
- Sprinkle the salt onto the shredded cabbage and massage the salt into the shreds, so it can penetrate every piece. After about 5 minutes, the cabbage will become soft and slightly translucent.
- Mix in other spices as desired, and transfer the cabbage (but not any pooling liquid) to
