Bean Cheesecake

Beans can make a fantastic base for creams, ice creams, cakes and candies. White beans especially are extremely versatile and carry all sorts of flavours really well. Beans are also low cost, quick to prepare and are more environmentally friendly. My wish is that, in the future, locally grown beans are our first port of call when creating sweet and savoury dishes and I hope this recipe inspires you to think differently about their potential.
