Once you have completed the preserved oranges recipe, you can use them to create the following hummus recipe.

Ingredients

  • 240 g ( oz) tinned chickpeas (garbanzo beans), drained and rinsed

Method

Put the chickpeas, aquafaba, preserved orange and orange juice in a food processor and process until smooth, then stream in the tahini and olive oil and add the garlic cloves (if using), chilli flakes, cayenne pepper and pink peppercorns at the end. Serve with fresh bread or as part of a salad plate or mezze.

The hummus will keep in the fridge in a sealed container for up to 1 week.
