This is one of my all-time favourite recipes. It came about when I was inspired by our guest chefs on the Plant Two course. We had been cooking sponges with Kirk Haworth and making delicious mushroom ‘Twix’-style bars with Ayelen Martinez and this recipe was a byproduct of what they were teaching. With layers of mushroom sponge and caramel enrobed in chocolate, nothing beats the finesse of an adaptogen-spiked layered sponge.
