Find a vegetable parer and a small sharp knife, a large bowl for iced water, a small bowl for the dressing, two spoons and a pretty bowl for serving the salad.
Remove any outer bruised leaves from the lettuce head, and separate the remaining leaves. Wash in cold water and then drain well. Trim the tops and base from the spring onions and wash well. Wash the tomatoes and cut in quarters.
