  • 4 ripe bananas
  • 4 rounded teaspoons soft brown sugar
  • 1 lemon
  • 4 teaspoons honey


Cut four large squares of foil, big enough to wrap a banana. Find a grater, a knife and a teaspoon. If the oven is already hot, these can be baked. Otherwise they can be heated under the grill.

Peel the bananas and place each one in the centre of a square of foil. Sprinkle them with the sugar and a little grated lemon rind.

Cut the lemon in half, and squeeze a little juice over each banana. Finally drizzle a teaspoon of honey over each one.

Pick up the edges of the foil and fold over the top of the banana to make a packet. Fold in the ends to seal.

Place the packets, either in a hot oven or under a hot grill. Either way cook them for about 10 minutes. Open the packets carefully and serve the bananas in the foil containers.
