Find a large saucepan and a bowl that will fit snugly over the top. A wooden spoon, a sieve for the icing sugar and a 7" shallow square tin. Line the tin with a strip of greaseproof paper cut the width of the base. Half fill the saucepan with hot water and set the mixing basin over the top.
Break the chocolate into the bowl and add the butter. Leave over the hot water, stirring occasion
