Find a chopping board and a sharp kitchen knife. You will need a clean tea towel to dry the shredded cabbage, a small vegetable knife, a tablespoon, a good sized mixing basin in which to prepare the salad and a china or wooden bowl for serving it.
Cabbage shreds up into a lot of salad – from a tightly packed head you will only need about a quarter to make enough for six servings. Summer cabbages are often more open and in this case you will need about half the head. Remove any outer damaged or coarse leaves. Cut the cabbage half through again to make two quarters. Slice away any core.
