This is the dish that kept your French peasant going throughout the cold months and will reduce your central heating bill greatly. To render chicken fat put the pieces of fat in a frying pan and let them cook gently until they give up the liquid fat. You can then drain this off and keep in the fridge for up to three months. An alternative is olive oil.
