Ingredients

  • 1 egg yolk
  • 3 hard-boiled eggs, rubbed through a sieve
  • 1 tablespoon fresh breadcrumbs

Method

Add the egg yolk to the sieved eggs, then add the breadcrumbs, and season. Flour your hands and roll the mixture into tiny balls. Drop them into the boiling soup and simmer for 5-10 minutes before serving.
