  • 225 g (8 oz) cooked mashed potato
  • 1 tablespoon semolina

Method

Mix the mashed potato with the semolina. Cook the onion for 5-10 minutes with the fat or butter and add to the potato mixture. Add the parsley and season with salt and pepper. Mix in the beaten egg and gradually add enough flour to make a soft but cohesive dough. Make small dumplings from the mixture and cook in the soup for 7-10 minutes.
