These little dumplings, also known as matzo balls, are made with matzo meal. Matzo is the type of cream cracker water biscuit that is used during Passover when no leavened bread is kept in the kitchen. The dumplings are traditionally served only at Passover, but in more recent times have come to be eaten throughout the year. They vary from country to country and indeed from household to household.
