I had a Belgian great-aunt, and the Belgians love chicory and eat a great deal of it. Aunt Emy had the best cook in Brussels - which is saying something. The measurement round her waist when she married was the measurement round her neck when she died at ninety-four. She gave me my love of chicory and this is her recipe. Don’t forget to remove the core from the base of your chicory as this can be bitter.
