This is an interesting little dish that I made up when the weather got cooler and I could actually start thinking about food again. I think it’s an interesting mix of flavours that works very well and I hope you like it.

Ingredients

  • 400 g (14 oz) chicken fillets (you can use both breast and thigh for this, or you could just buy a whole chicken

Method

Mince your chicken or chop it very, very finely, and put it in a bowl with the breadcrumbs, the egg, parsley, chilli flakes (if using), salt and pepper, cumin powder and the finely chopped onion and garlic. Mix it all together well and form it into little patties about 5 cm (2 inches) in diameter. Leave to stand for 1 hour.
