One of the best one-pots is of course a clay pot. You want to get a good-sized clay pot so that you can put whatever vegetables you want to cook around the bird. I suppose the clay pot was an advance on cooking methods you still come across in Greece of covering a bird (usually quite a small bird) with wet clay.
