This is a rather delicious dish that was the speciality of the cellar restaurant, the Opera House, in Stockholm. The dill is of course very reminiscent of all Swedish cooking and is probably the one ingredient that you can’t vary. If the herrings have roes, either soft or hard, put them in as well, at the same time as the fish.

Ingredients

  • 8 medium potatoes, thinly sliced
  • 2 onions, thinly sliced
  • 400 ml (14

Method

Put the sliced potatoes and onions in a shallow casserole and pour over the cream to barely cover. Crumble on your bay leaf and add your thyme and white pepper. Cook over a medium heat, covered, until the potatoes are tender (about 20 minutes).

Preheat the oven to 200°C/400°F/gas mark 6
