Now that sea bass is being farmed and is so readily obtainable and relatively cheap - although not quite as tasty as the wild sea bass - this is an excellent way of cooking it. Although if you prefer you can substitute any of the bream family for the sea bass.
Put the breadcrumbs in a bowl with the milk, thyme, garlic and onion and leave to stand for about 10-15 minutes. Drain off any excess liquid and stir in the cheese. Stuff the fish with this mixture.
