This is one of my staple dishes, and is terribly easy to make. If you don’t have a wok, and indeed I don’t, just use a deep sauté pan. If you leave out the noodles, you can serve the prawns as a starter.

Ingredients

  • olive oil
  • thumb-size piece of fresh ginger, peeled and cut into julienne strips
  • 2 garlic cloves, finely chopped

Method

Heat the olive oil in your wok or sauté pan and cook the ginger, garlic, spring onions, chillies and mustard seeds for a few minutes until the garlic is soft. Put in your prawns (leave the tails on if you wish) and cook until they change from transparent to opaque, turning them as you go.

Add your soya sauce and a bit of salt and throw in your noodles. Toss to heat the noodles through,
