A sausage casserole is an excellent and cheap way of entertaining your friends. You will need good sausages but it’s quite nice if you use ordinary sausages intermingled with some of the spicy Italian or French Toulouse sausages that you can find on the market. This dish is about as simple as you can get, and if you turn the oven down, you can go away and leave it. Normally I would serve it with mash, but for the purposes of this book I would suggest that you add either very small potatoes
