This is a very early recipe using potatoes, and comes from a nineteenth-century writer called Dr Kitchener in his Book of the Cook’s Oracle. It uses that much-loved Georgian condiment, mushroom ketchup. You can buy this in bottles in delicatessens and I think it makes all the difference to the pie, but you can leave it out if you prefer.
