Ingredients: 1 small onion, finely chopped; salt and pepper; 60 g (2½ oz) butter, cut into small pieces; 1 packet of puff pastry; 1 kg (2¼ lb) potatoes, peeled and thinly sliced; 4 hard-boiled egg yolks, coarsely chopped (optional); 1 tablespoon mushroom ketchup (optional)

This is a very early recipe using potatoes, and comes from a nineteenth-century writer called Dr Kitchener in his Book of the Cook’s Oracle. It uses that much-loved Georgian condiment, mushroom ketchup. You can buy this in bottles in delicatessens and I think it makes all the difference to the pie, but you can leave it out if you prefer.
