This Turkish dish is one that can be vegetarian. I’m just going to give you a fairly straightforward recipe but then you can use your imagination to bulk it out. It is a good, filling dish and one that responds well to extra ingredients. For instance, try adding sweetcorn, aubergines, spring onions, puntarelle mushrooms, green beans or baby broad beans.
