Pershore in Worcestershire has always been renowned for its plums but today people don’t really know what to do with plums, so I recommend this recipe to you. Using plums of different colours makes the dish more attractive, but it doesn’t matter if you can’t get a variety.

  • 750 g (1 lb 10 oz) red plums (Victoria plums are good for this)
