This is a standby of a friend of mine and is quite delicious. It isn’t actually cooked at all, so is well within the confines of one-pot cooking. It keeps for ages, so you can make it even a couple of days before your party.

  • 400 g (14 oz) tub natural Greek yogurt

Method

Blend the yogurt, lemon curd and lemon juice together thoroughly and put it in the fridge to chill. I sprinkle the top with soft brown sugar, which goes slightly caramelised and I think makes it even more delicious.
