Rice pudding is a perfect one-pot dish, whether cooked on top of the stove or in the oven. This is a Portuguese recipe called ‘sweet rice’ or ‘arroz doce’.

  • 700 ml ( pints) milk
  • 250 g (9

Method

Pour the milk into a pan and bring it to the boil. Add the rice and sugar and when the milk returns to the boil, add the lemon rind. Turn down the heat and cook the rice for as long as it takes to absorb the milk, usually about 20 minutes. Then remove from the heat.
