Procedure

  1. Drain the tomatillos.
  2. Combine tomatillos, onion, garlic, chiles, and cilantro in a blender. Blend to a smooth purée.
  3. Heat the oil in a large saucepan. Add the purée and cook 4–5 minutes, or until slightly thickened.
  4. Season to taste with salt.
