Orange Fluid Gel


U.S. Metric Ingredients
¾ cup 180 fl oz Sugar
8 fl oz 240 fl oz Water
2 fl oz 60 mL Lemon juice
7 fl oz 210 mL Orange juice
tbsp 22 mL Lemon zest, grated
2 tbsp 30 mL Orange zest, grated
1 tbsp 15 mL Agar-agar
1 oz 30 g Butter, unsalted
to taste to taste Salt



  1. Combine the sugar, water, lemon juice, orange juice, and agar-agar in a stainless steel saucepan. Whip with a wire whip to combine all ingredients.
  2. Bring to a boil and boil for 2 minutes.
  3. Pour into a flat, stainless steel pan. Let sit 6 hours or overnight. The mixture will set up until very firm.
  4. Break up the gel and place in a blender. Purée until smooth, scraping down the sides as necessary.
  5. Add the raw butter and salt and blend in.
