- Heat oil in a soup pot. Add the onion and garlic. Cook slowly until soft, but do not brown.
- Add the potatoes and water. Simmer until the potatoes are very tender.
- Purée the soup or, for a coarser texture, simply mash it in the pot.
- Cut the sausage into thin slices. Heat it slowly in a sauté pan to cook off some of the fat
