Maple Cinnamon Apples Sous Vide

Ingredients

8 oz 240 g Apples, cut into small balls with parisienne scoop or into medium dice
2 tbsp 30 mL Maple syrup
pinch pinch Salt
¼ tsp 1 mL Cinnamon

Method

Procedure

  1. Place all ingredients in a vacuum bag and seal on 90% vacuum.
  2. Place the bag in a thermal circulator heated to 165°F (74°C). Cook for 30 minutes.
  3. Use as garnish for soups, salads, desserts, or other dishes.
